Matbukha (Arabic cuisine) : The matbukha (or matbucha) is a flat made of tomatoes and peppers grilled, seasoned with someail and pimento (in Arabic: مطبوخة: maṭbūkhah; in Hebrew: סלט טורקי, turkish salat).
The matbukha is food au Lebanon, riding a Israel and Palestine.
We could assimilate it to the ratatouille nicoise, but without the eggplant and zucchini.
The name of the dish comes from Arabic and means “ s cooked ". Matbucha is served in appetizers, often in mezze.
En Israel, this dish is sometimes called the “ s Turkish ».
Matbucha is also popular across the Maghreb. It would have been imported in Israel by new immigrants from Morocco, Tunisia,Algeria and Libya.
