Moros y Cristianos (Cuban cuisine) : The Moros y Cristianos is a flat traditional Cuban served both in the maisons and in restaurants. This is the version Cuban du rice and beans, flat found throughout theLatin America, Caribbean and the south of United States of America.
Etymology: Moros y Cristianos means “Moors and Christians”. Moros refers to Black beans and Cristianos White rice. The name of the flat is a reference to African Muslim governance (early 8th century) of the Iberian Peninsula and the subsequent Reconquista (*) during which Spanish Christians led by wealthy northern familiesSpain forced the Moors of southern Spain into Africa.
(*) The Reconquista (Spanish and Portuguese word, in French: Reconquest) is the name given to the period of the Middle Ages during which the reconquest, by Christian kingdoms, of the territories of the Iberian Peninsula and the Balearic Islands took place occupied by Muslims. It is commonly accepted that the Reconquista began in the first half of the 8th century.
Prep time : The onions,ail and p are commonly used as stir fried. At this stir fried are added on White rice and Black beans precooked, as well aswater in which the beans have been boiled. Others seasonings such asCuban oregano and leaf de laurel are often added to flat to give more flavor.
The name Moros y Cristianos is more commonly used to refer to the flat similar to Red beans which is traditionally consommé in the eastern part of the island.
