Yassa (African cuisine) : “Yassa” is a way of preparing the meat (chicken ou mouton) or fish yassa in the Casamance region (Ziguinchor province) in Senegal. The meat (or fish flesh) is cut into pieces which are marinated in lemon juice, theoil, onions minced, peppers whole, seasoned et condiments (laurel, clove,…) Then grilled and cooked over low heat with all the ingredients of the marinade. The yassa dish is served with rice or mil.
It is one of the two most famous dishes outside the African continent with the mafe.
