Keshy yena (Curacian cuisine) : The keshy yena is a culinary specialty islands of Curaçao (See map below) made from a young Edam cheese which is cut with couteau a cap on the top and which is hollowed out, leaving walls of 1.5 centimeters. The removed cheese is cut into dice then mixed with a stew cooked from meat de porc or beef cut into dice ou chopped. This preparation is incorporated with olives pitted, tomatoes in small neighborhoods and onions minced.
The edam ball is filled with this obtained mixture. The cap is replaced, which is held with sticks and we bake four the keshy yena.
