Arenkha : Arënkha is a product made from wild herring and 100% natural ingredients, using the so-called micronization or spherication technique. A manufacturing process to obtain small black and shiny pearls, free of any artificial flavor or preservative. Fished in the North Sea, near Norway, in water that is naturally less polluted than the Baltic Sea, the herring Arënkha are selected from the most beautiful species. They are then immediately shipped to Holland to guarantee optimal freshness, where they undergo the smoking phase thanks to a particularly original mixture of wood. This technique allows an almost complete dehydration of the herring and delicately raises the fillets to keep only the finest aromas. It is from these fillets, the noble part of the herring, that we proceed to the higher processing stage called micronization, in their factory in Murcia, Spain. This process reduces the fillets to microparticles. They are then seasoned with natural ingredients (salt, lemon juice) and colored with squid ink to give them their precious black-gray color.
Arënkha beads are colored withsquid ink : a particularity on the cured meat market where the eggs of rag and other fish eggs are colored with E153, a carbon-based black food coloring (and by the way banned in the United States in the industry). Arënkha does not require any addition of artificial flavor or flavor enhancer thanks to its high and qualitative percentage of delicately smoked herring used in its composition (40%). The nutritional values of the herring, which are particularly interesting, and the high protein content are then preserved.
