Saury (fish): The saury is a sea fish with the shape and length of a sardine; its lower jaw has a fairly strong, thin, needle-pointed beak. The saury is from the Scomberesocidae family.
This fish is abundant off Martinique, where it is fished with torches (or lamparo).
Saury flesh is firm and delicate. It is prepared like the sardine.
