Carmine endive: Carmine endive (Asteraceae family - Botanical name: Cychorium intybus), also called red endive or Endigia, is the result of a cross between chiogga chicory and red endive.
Its taste is slightly sweeter which, combined with a fairly sweet bitterness that is somewhat reminiscent of hazelnut.
Crunchy and tasty, it is used to decorate many starters.
