Endive: Endive (a word from the Latin intibum "wild chicory") comes from a variety of bitter chicory (Botanical name: Cichorium intybus), a biennial plant of the Asteraceae family.
This chicory is, however, usually cultivated as a plant for its roots which give elongated white apples with tight leaves, called "chicons" or "endives", which are blanched shoots obtained by forcing and thinning in the dark.
