Paccheri (Italian paste) : The paccheri are large pasta de durum wheat, short tube-shaped. They are traditionally from Naples and generally made with semolina de durum wheat.
The term derives from the ancient Greek (from “πας” [all] e “χειρ” [main]) of the first founders of Parthenope (*), the current city of Naples.
This format of giant dough is particularly suited to Sauces thick. Thanks to their size, the paccheri can also be farcis, ricotta cheese or others ingredients, or served with a stew.
In Italian, in everyday language, the term pacchero (singular of paccheri) is often used in the sense of slapping someone.
(*) Parthenope: In Greek mythology, Parthenope is a mermaid who falls in love with Ulysses.
