Kipper (English cuisine): A kipper (also called red herring) is a method of preparing and preserving fish (generally a large herring or salmon) which, whole, has been split in two from head to tail, hollowed out, flattened, removed from its bones, salted and barely smoked (cold), which gives it a red color.
The British sometimes serve it at breakfast instead of or in addition to eggs and bacon.
The kipper can be eaten as is or cooked briefly...
