Kangkong (Filipino cuisine): Kangkong, also called kangkong chips, is a Filipino appetizer dish fried in crispy tempura made from water spinach leaves (*) called kangkong and coated with an egg-based batter and of flour.
(*) In fact of spinach, these are water bindweed (botanical name: Ipomoea aquatica).
Kangkong is eaten dipped in various dipping sauces including mayonnaise sauce.
A vegetarian or vegan version of the dish can also be prepared...
