Cotignac (confectionery): Cotignac (from the Provençal coudoignac meaning quince) is very sweet and transparent quince paste, added with glucose and molded in small round thin wooden boxes, cheese box type. The pink color comes from the oxidation of the fruits during drying. This popular and very old delicacy is made in Orléanais (a region in central France).
