Champvallon: “Chamvallon” is the name given, in classic cuisine, to a preparation of mutton chops, cooked in the oven between a layer of onions and a layer of potatoes. This classic preparation dates back to the time of Louis XIV; it is due to one of his mistresses who, by flattering the king's gluttony, for a time supplanted the Marquise de Maintenon (to whom we owed the cutlets en papillote)....
