Axuria (Basque cuisine): Lamb “Axuria” (pronounced achouria, which in Basque means “fatty lamb”).
The “Axuria” lamb is a suckling lamb found from Christmas to Easter.
An agricultural cooperative created in 1983 which brings together nearly 162 breeders from the Basque mountain of Soule took the name of its product “Axuria”.
