Axoa (Basque cuisine): Axoa (pronounced: achoa) is a traditional dish from the small region of Labourd (in the Basque Country in the Pyrénées-Atlantiques). This rustic dish, which was served on fair days, is not really codified: it is thinly sliced beef or veal, or even duck meat seasoned with spices, Espelette pepper and onions.
The potatoes that usually accompany the axoa, are served either plain or cooked in the sauce of the dish.
