Khoa (Indian cheese): Khoa, khoya or mawa is a dairy product, originating in the Indian subcontinent (*), widely used in the cuisines of the Indian subcontinent, encompassing India, Nepal, Bangladesh and the Pakistan. It is made from whole dried milk or milk thickened by heating in an open iron pan, Russian type.
Its humidity is lower than that of typical fresh cheeses such as ricotta.
