Brix scale: The Brix scale is used to measure in degrees Brix (°B or °Bx) the fraction of sucrose in a liquid, that is to say the percentage of soluble dry matter. The higher the Brix, the sweeter the sample. Attention: the Baumé degree uses the same notation °B.
