Piloncillo (sugar): Piloncillo sugar is a very common sugar in Brazil, Mexico, Peru, Argentina, Central America, Panama, Colombia, Venezuela, Ecuador, Bolivia and the Canary Islands.
Piloncillo sugar is also called depending on the country: "panela", "raspadura (or rapadura)", "atado dulce", "chancaca", "empanizao", "papelon" or even "panocha".
Its only ingredient is sugar cane juice, which is cooked at high temperature to give a kind of molasses.
