Poulamon (fish): The tomcod is a small sea fish, from the Gadidae family, but which, in Quebec, travels up the course of the St. Lawrence in winter to spawn. This moment is the occasion of popular festivals, in particular in Sainte-Anne-de-la-Pérade: as soon as the ice is set, hundreds of small huts are erected on the river to fish for tomcod, also called "small fish of the channels ”. The tomcod is best prepared for frying.
