Ceteau (fish): A ceteau is a small flat fish (Soléidae family) abundant in France from the Loire to Arcachon (the region of Marennes-Oléron provides half of the catches), but also on the African coasts.
Also called "cat's tongue" or "avocado's tongue" in the Southwest, it barely exceeds 25 cm and has a light brown skin. Very fragile, because not emptied, it must be eaten quickly, fried in very hot oil.
