Tare (Japanese cuisine): Tare (垂れ) is a general term in Japanese cuisine that refers to dip-type sauces, often used for grilling (yakitori, yakiniku, and especially teriyaki) but also for sushi, nabemono or gyoza.
The sauce resembles a sweet, thick soy sauce when used with grilled meats.
It is flavored with dashi, rice vinegar, etc., for nabemono and natto and resembles ponzu sauce.
