Samlar machu (Cambodian cuisine): Samlar machu (in Khmer *: សម្លម្ជូរ-: 'sour soup') is a Khmer term (*) for a category of sour soups.
The sour flavor of the soup comes from the use of tamarind (អម្ពិល), but variations also include other tart fruits and vegetables such as tomatoes (ប៉េងប៉ោះ), pineapples (ម្នាស់), water spinach (Ipomoea aquatica), celeriac, as well as the leaves of Tiliacora (Tiliacora triandra វល្លិយាវ).
