Sarcophagus (quail): The quail in a sarcophagus is a dish taken from the film Le Festin de Babette by Gabriel Axel (1987), notably with the French actress Stéphan Audran.
It is a boneless quail that is golden brown in the oven. It is garnished with a cognac sauce, truffles, a slice of goose foie gras and mushrooms then served enclosed in an oval case (sarcophagus) in puff pastry.
