Pluma (Spanish cuisine): “Pluma” is the Spanish word for part of the Iberian pork. It is the piece attached to the lomo (loin) or fillet at its posterior end. Its name comes from its triangular and flat shape, similar to a feather. The best plumas come from “pata negra” pigs.
