Pio Quinto (Nicaraguan cuisine): Pio Quinto is a Nicaraguan dessert consisting of a sponge cake soaked in rum, topped with pastry cream and sprinkled with cinnamon.
Some recipes also include prunes or raisins soaked in rum.
Pio Quinto is consumed after meals but especially during the Christmas period.
This cake would have been named after the name of Pope Pius V (1504-1572) ....
