Mole (Mexican cuisine): In Mexican cuisine, mole (Spanish word taken from the Náhuatl mulli, "sauce" in English) is a sauce made from chili, cocoa or chocolate, sesame, peanut, tomato, fried and crumbled tortilla.
This sauce is thickened with corn dough or, to a lesser extent, with bolillo (salty bread).
Other optional ingredients can be added depending on the region or family recipes. There are mole recipes with over a hundred ingredients.
