Joël (fish) : Joel (also called Atherine) is a species of saltwater fish family of Atherinidae (Scientific name : Atherina boyeri) that we encounter in theAtlantic Ocean (from off the Portugal up to the height of the Mauritania), In Mediterranean sea, In the black Sea and in the Caspian. Etymology: Its scientific name, boyeri, was given to it in honor of Guillaume Boyer, naturalist, poet, mathematician and doctor from Nice, died around 1355. Description: Atherina boyeri measures up to 200 mm. Elongated body, upper jaw. Two dorsal fins, the first is located about halfway up the body, the second in the last third. Habitat: The fish Atherina boyeri can be found indifferently in sea water, riding a brackish water and eau douce. Shoals can form very close to shore, this fish is caught to serve as bait for larger fish. Culinary use of joel: This fish is consommé traditionally in frying et served under the name of jol, joels, joëls or mangetout.
