Sciatt (Italian cuisine): Sciatt are small cheese fritters made in Valtellina which is a region of northern Italy, bordering Switzerland, which corresponds approximately to the valley of the Adda river and its tributaries. These donuts are in the form of balls of local Fontina-type cheese rolled in a dough made from buckwheat flour, flavored with grappa (Italian marc brandy), then fried.
