Hünkârbeğendi (Turkish cuisine): Hünkârbeğendi or simply beğendi (literally, "the sultan liked it"), is an eggplant and lamb meat dish from Ottoman cuisine (*).
It is made from grilled eggplant until the skin is burnt, giving it a smoky flavor. Eggplant is mashed, seasoned and thickened with bechamel sauce.
The mixture is then topped with sautéed or grilled cubes of lamb.
