Dacquoise cookie : The biscuit dacquoise is a biscuit made up in particular of egg whites and a mixture of icing sugar and powdered sugar, dry on the inside, soft on the outside, like a smooth macaroon (gerbet macaron).
Traditionally enriched with almonds, it can also be enriched with hazelnuts, pistachios, coconut or spices. This biscuit is widely used today, especially as a support for pastry desserts. We then speak of “Dacquoise de….”.
