Mignonette (butchery): The mignonette is a piece of meat cut from the back of the pig (square). Once the tenderloin, tenderloin, spiringues, loin and ribs have been removed, only the rack remains. This is cleaned and degreased to obtain a lean fillet. We then cut 2 cm thick slices: the mignonettes. A piece of 125 to 150 g per person is ideal.
