Ba-ta-clan is a cake made of fresh almonds crushed in a mortar, to which eggs are added one by one, then sugar, rum and coffee and flour. Baked in a flat fluted mould, the Ba-Ta-Clan is topped with a vanilla-flavoured fondant on which slivered and toasted almonds are added.
Its name comes from the famous Parisian café-concert at the end of the XNUMXth century ...
