Agnolotti (pasta): Agnolottis (“priest's hat” in Italian) are rectangular, more rarely semi-circular, stuffed pasta of Piedmontese origin.
They can be cooked by poaching in boiling water, or in a pan with a little butter. They are most often accompanied by a fairly simple tomato or basil sauce, so as not to alter the flavor of the stuffing.
