Corsican estouffade: Corsican estouffade (stufata) is a veal stew traditionally prepared at Christmas. It is composed of sautéed Corsican veal, green olives (sometimes black or even both), raw ham or coppa, garlic and onion, Corsican red wine, tomato sauce, olive oil and herbs from the maquis. The stufata is simmered for a long time by the fire.
