Part of the angels: locut. The “share of the Angels” is the volume of wine or alcohol lost by evaporation during aging in barrels. This expression is mainly used for spirits produced in Cognac and Armagnac. The tax administration takes this share of angels into account in the calculation of the stocks of eaux-de-vie in the cellars and admits a loss of 2 to 3% per year depending on the size of the barrels.
