Moldy: n. and adj. Organoleptic deviation of a wine with a corky, earthy, unpleasant nose and mouthfeel (smell of rotten wood, mustiness, dust). It is a defective wine that is often wrongly described as corked taste. Originally, if the quality of the cork is not questioned, this is due to defective hygiene or a lack of sorting at harvest. Some of these factors can also very often come from the very conditions of storage of the wine or from an affected harvest.
