Brevibacterium linens: "Brevibacterium linens" or "red ferment", is a bacterium used for the manufacture of munster géromé and maroilles cheeses as well as Herve and nasal cheeses, and responsible for their orange-red color. This bacterium is at the top of the list of more than twenty bacteria of the genus Brevibacterium.
