Serge Bruyère: Serge Bruyère is a French-Quebec chef (Saint-Galmier, Rhône-Alpes region 1951 - Quebec 1994).
He did his apprenticeship with Paul Bocuse and the brothers Jean and Pierre Troisgros. In 1976, he emigrated to Montreal and, four years later, opened his restaurant in Quebec, À la table de Serge Bruyère.
In 1988, an American agency crowned it the best table of the year throughout the world.
