Grotto (Swiss restaurant): A grotto is an open-air restaurant typical of Italian-speaking Switzerland (Canton Ticino and Italian-speaking Graubünden) serving regional cuisine. Origin of the term: The name comes from natural caves where the rural population of Ticino kept wine , ham and cheese. Modern methods of refrigeration making this type of preservation superfluous, many peasants have transformed these storage caves into meeting places for the tasting of wine or other products.
