Skim: v.tr. “Skimming” means separating the cream from the milk.
Skimming occurs spontaneously after 24 hours when fresh whole milk is left to stand.
The cream rises to the surface, where it is easily removed, especially for use in home baking.
In dairy, skimming is done in centrifugal cream separators.
Commercially, milk is sold whole, semi-skimmed or skimmed.
