Shorten: v.tr. “Shortening” in the kitchen means making it shorter to get rid of a hard or damaged, unusable or too long part, for example.
For example, Brussels sprouts are shortened by removing the hard part at the base.
In the butcher's shop, the shortened leg of lamb is prepared: the weight of a shortened leg corresponds to approximately 4/5ths of the weight of a whole leg.
The same for the shortened hock which then takes the name of hock....
