Polyphosphates: Phosphates are the salts of phosphoric acid, also known as orthophosphoric (E338), which exist naturally. Polyphosphates are the salts of polyphosphoric acid consisting of a condensed form of phosphoric acid derivatives produced by polymerization.
Polyphosphates are listed in the Codex Alimentarius as a food additive acidity regulator, emulsifier, humectant (water/moisture retention agent), raising agent, sequestrant, stabilizer and thickener.
