Identify: v.tr. “To surround” is to make a shallow incision, using a paring knife, in the skin or the envelope of a fruit. Surrounding an apple to be baked (around the entire circumference, at an equal distance from the two poles) prevents it from bursting during baking; circling the chestnuts makes peeling them easier.
