Eviscerate: v.tr. “To eviscerate” is to remove, manually or mechanically, the entrails (viscera), including offal, from a slaughter animal, poultry, fish or game.
The word "eviscerate" comes from the Latin eviscerare, to gut, from viscera, entrails.
In charcuterie, the viscera are called offal and are sold in the triperies.
In everyday language, the term viscus is used to designate the abdominal organs (liver, stomach, intestines, etc.).
