Cooking en papillote: Cooking en papillote is a method of steam cooking, consisting of placing the food or foods in an airtight container and cooking the whole thing. The container can be aluminum foil or parchment paper, but also the brik and filo sheets; certain vegetable leaves, such as banana leaves (widely used in Asia), cabbage or leek can be used. This cooking method is suitable for all types of food (salty or sweet).
