There are two origins to this slang expression dating from the second half of the XNUMXth century. The first, given by André Larue (in The cops in 1969) would come from the fact that once a policeman has gone through the police force's mill and has been laid off, or even "resigned", all that remains is the possibility of having some beef. carrots on its menu, a dish supposedly inexpensive and therefore cost adapted to its new budget.
The second is proposed in 1984 in the film Crooked cops Claude Zidi, according to which the IGS agents "cook" their comrades presumed guilty and let them "simmer" for a long time, as one would do with a good beef with carrots.
The gendarmerie also has its beef and carrots, the BEC or Bureau of Investigations and Controls. Clearly, at home, it is not good to fall on a BEC.
