Cogollos: The term “cogollos” comes from Spanish and means “heart” in the sense of “heart of salad”. We will speak in French of "sucrines" or even of "craquerelle du midi" to designate "hearts of salad".
This product is found in the Basque Country, on the French side as well as in the Basque Country on the Spanish side. Roman balloon type, cogollos form a small tall apple with thick, crisp, dark green leaves.
