Woody: adj. A woody wine is a wine that has a smell provided by aging in new oak barrels.
The Bordeaux wines age for 12 to 30 months in oak barrels. They use a percentage of new barrels which infuse the wine with aromas of vanilla and toast. If the wine is not rich, concentrated, the woody aromas influence it excessively. If the wine is rich, concentrated, and if judicious use is made of new barrels, the fruit is combined with the woody aromas.
