T-Bone (butchery): The T-bone (sometimes written “Ti-bone” for a question of consonance with English) is a slice of boneless sirloin. The T-bone steak has part of the tenderloin and the rib eye.
In the American cut, the sirloin part of the sirloin is cut vertically, keeping the central bone, which gives the sirloin steak, in English the T-bone steak which means the bone in the shape of a T.
