Samfaina (Spanish cuisine): Samfaina is a Catalan and Valencian preparation, made with aubergines and zucchini diced and sautéed in olive oil, with chopped onions, grated garlic and tomatoes . Some variants add diced green and/or red pepper and some aromatic herbs such as thyme or rosemary. In Catalonia, samfaina is usually eaten as an accompaniment to meat (typically pork chops, goat, rabbit, etc.).
